We are the ambassadors of the Ancient Italian Wheat Senatore Cappelli variety, among the first to believe strongly in the return of this highly prized variety of durum wheat to the tables of Italians. Known in the last century as the “King of Italian grains,” the Senatore Cappelli variety is distinguished by its tall ears with long black whiskers and draws nourishment from the richest and deepest layers of the soil. For this reason, it has distinctive organoleptic and nutritional properties, which have also been proven by scientific studies. The supply chain of our Senatore Cappelli variety wheat is managed internally by our company, starting with Italian seed, certified and guaranteed pure; it passes through our fields and arrives at our mills, where we process it into semolina.
